Quick and Easy Breakfast Recipe for spring: Strawberry Oatmeal

Ah spring! Nothing like more sunshine and getting outdoors more often to bring fresh eating to mind! In that spirit I wanted to share a breakfast recipe (or an anytime snack!) that is great for enjoying as the sun wakes the world up. This strawberry oatmeal can be made with either fresh or frozen strawberries for that sweet burst of springy flavour.  


The chia seeds in this recipe are a great addition for helping with gut health and managing blood sugar levels, so you don’t get that after breakfast sugar crash. Both the strawberries and chia are great sources of anti oxidants to combat free radicals and inflammation.


With the use of maple syrup as a sweetener, it has a lower glycemic index than white sugar, and comes accompanied by additional minerals such as manganese.


And lastly, by using almond milk, not only is this recipe friendly to the lactose intolerant, but almond milk in rich in Vitamin E which is good for skin and heart health.


It doesn’t get any simpler than this recipe. It’s so nice when a recipe is not only easy to make, but good for you. Remember it doesn’t have to be complicated to taste great!

Strawberry oatmeal 

 

3 cups Unsweetened Almond Milk

1/2 cup oatmeal (uncooked)

2 tbsp Maple Syrup

2 tsp Vanilla Extract

2 cups Strawberries (fresh or frozen, chopped)

2 tbsp Water

2 tbsp Chia Seeds

 

In a large pot over medium-high heat, combine the almond milk, oats, maple syrup and vanilla. Bring to a gentle boil then reduce the heat to low and cover the pot with a lid. Let it simmer for 30 to 35 minutes.


Meanwhile, in a second pot over medium-low heat, add the strawberries and water. Heat until the strawberries release their juices then simmer for 10 minutes. Remove from heat and stir in the chia seeds. The sauce will thicken as it cools.


Add strawberry sauce and enjoy.
