December Feature Recipe: Prune, chocolate, gingersnap and almond bites

With December here and with it all the socializing opportunities, we thought it would beneficial to share a healthy, and yummy recipe that will help you stay feeling your best this holiday season.


What's so special about this recipe? There are many ingredients in this one that are good for you, but in this recipe the focus is on the addition of ginger. Ginger is known for its blood sugar regulator (great when we are indulging in all those holiday treats), immune support (can any one say cold and flu season?), as well as its anti-inflammatory properties, benefits in digestions, as well as rich in antioxidants.


What you need:


Ingredients

  • 1/2 cup Whipping Cream

  • 14 ozs Dark Chocolate (at least 70% cacao, chopped)

  • 1/2 cup Butter (unsalted)

  • 8 ozs Gingersnap Cookies (roughly crushed)

  • 1 cup Pitted Prunes (roughly chopped)

  • 3/4 cup Almonds (roasted, chopped)

  • 1/2 tsp Cinnamon (optional)


How to make it:


Line small loaf pans with parchment paper or use silicones pans.

  1. In a saucepan over low heat or in a double boiler, gently melt the whipping cream and chocolate. Stir in the butter until smooth.

  2. Mix in the cookies, prunes, almonds, and cinnamon (if using).

  3. Divide the mixture evenly between the pans. Smooth the top, and tap the pan on the counter to settle it. Let cool completely at room temperature, then refrigerate for two to four hours or until set.

  4. Once set, remove from the pan and slice into bite-sized pieces. Serve chilled and enjoy!
